(Makes approximately 25 patties)

4 cups corn meal
4 cups boil­ing water
But­ter or ani­mal lard for fry­ing
2 tea­spoons salt

Combine four cups of corn meal and two tea­spoon of salt in a mix­ing bowl. While stir­ring, slowly pour in four cups boil­ing water, until the mix­ture is a smooth, thick dough with­out any lumps. In a large skil­let, add about four table­spoons of lard or but­ter for fry­ing on medium high heat. Shape the dough into flat, hand sized pat­ties. You can cook four or five pat­ties in the pan at a time. Fry each side until golden brown. Serve hot. These are some­times called Ash Cakes.
